"Automatically resize to fit contents" turns itself off

I've noticed that the "Automatically resize to fit contents" option
sometimes turns itself off if I manually adjust the column width.

Is there some rule for when this helpful action will happen?

Is there some way to tell Word to stop reading my mind or trying to
figure out what's good for me?

Hi Top,

I'm not aware of one. And running a quick test, I can't turn it off
at all by dragging either the column borders, or the markers in the
ruler. Nor by holding down any combination of Shift, Alt and Ctrl
keys while dragging. Also changing the setting via Table/Table
Properties doesn't seem to have any effect.

So, I'd say that when it does turn off - if you're not unchecking the
option - it's more of a fluke. And may indicate some damaged in the
document structure managing the table.
