Baseline and Finish Variance and Graphical Indicators

I understand that finish variance is the difference between baseline finish
date and the current scheduled finish date. However, I do I make sure that I
am using the most recent baseline? In other words, on Project A, I might
have Baseline1, Baseline2 and Baseline 3 but on Project B I have only one
Baseline and then on Project C I have five baselines. How can I account for
this?

By default, Microsoft Project calculates the Finish variance by subtracting
the difference between the Finish date and the Baseline Finish date. The
Baseline Finish field is part of the Baseline set of fields that contain
your original project baseline. Even if you are currently using the
Baseline5 set of fields, Microsoft Project will still uses the Baseline
Finish field in its Finish Variance calculation. If you wish to calculate
your Finish Variance using any other baseline set of fields, you will need
to use a custom Duration field and create a custom formula in it. Hope this
helps.
