Best way for remote access to outlook

Hi

Can anyone advise me the best way to allow users who are away from the
office to view emails using outlook web access through exchange 2000.
I am a little confused how users can securely access outlook web
access from an internet cafe, surely by giving them just a username
and password (and opening required ports) this leaves the server wide
open ?

I have heard ssl being mentioned but am totally lost as how to set
this up,
