Are there any limits for the number of
appointments/meetings a person can have at a specific time
or on one day?

No, but the Daily and 5 Day view can only display 14 at one time (Outlook
2003, I believe 2002 is ~8) . To view the rest, you will need to use a
table view. View>Current View> Active Appointments, is an example of a table
view.
