Can a delegate default the "From" box?

I have a few delegates of the CEO and an e-mail went out accidently because
the "From" box wasn't filled in when the assistant was sending as the CEO.

I am wondering if it is possible for the "From" box in a new Outlook message
can default to the CEO's name and not the delegates name.
