Can I edit or add to the Labels?

Sometimes meetings are cancelled and I would like to choose a Label in
Outlook to reflect that rather than delete the meeting so that there's no
record of it ever having been there. It would be nice if there was a tool to
create your own labels for particular circumstances.

You can edit existing labels, but you can't add new ones. Within the
calendar, go to Edit, Labels, Edit Labels.
