Can I use Excel for tracking expiry dates?

Probably, but unfortunately you're asking in an incorrect place.

This newsgroup is for questions about Access, the database product that's
part of Office Professional. You'd be better off asking your question in a
newsgroup related to Excel.

When you repost your question, you might consider giving a little more
detail, such as how your data is arranged, what you mean by "tracking expiry
dates", and what version of Excel you're using.
