If you mean Office 2003 then uninstalling the Office 2007 Trial will not get them back for you.
What you need to do is to back up all your data in Office 2007 that you want to save and then re-install Office 2003 using the Office 2003 media(CD). Then put back your saved data to the appropriate Office suites
