I thought the OP wanted a file read to him, like Adobe Reader can do.

I thought that on the first pass through the question, then read it a
couple more times, and it looks like he wanted the system to read the
document and create what it was reading. If just reading then OP could
use Windows Narrator, or Adobe reader like you say.

MS Excel's Text to speech (SpeakCells) feature can be used in Word and Powerpoint to read document content using the method here.

In Windows Vista you should also be able to use its speech tools.
