Can you tell what date and by whom a calendar item was made?

Display your calendar in a table view and add the "Organizer" and "Created"
columns to the view.

Where do I find "table view"?

In the View menu, of course. The views "Active Appointments", "Events",
"Annual Events", "Recurring Appointments", "By Category", "By Label" (in
Outlook 2003 and earlier), and "By Sensitivity" are all table views. I
usually use "By Category".
