Categories & flag column

I had all of my contacts in Outlook 2007 assigned to categories (some
contacts were in more than one category). How do you do that in Outlook
2010? If I click on the category in the contact's window, it pops up
the color category list, but says that the category I clicked is not on
the Mastery Category List. Where do I find this Master Category List?

Also, why can't I move the flag column to the left side instead of the
far right side?
