If the BMPs are embedded, you *may* get JPGs (or you may get GIFs) by saving
the document as a Web page, which splits the graphics out into a separate
subfolder.

No, there's really no way to affect the file format of a
graphics file stored in a Word document (except limited
capability to transform something to *.wmf format). You'd need
to do this in a dedicated graphics program, then import these
into the Word document.

If you save as an HTML file, the graphics in the file will be converted to
GIF Files unless they were originally JPG then they will save as JPGs.

You can open these files in MS Photo Editor and Save As a JPG file. Note:
Converting from GIF to JPG can reduce quality.

You can also Copy each graphic and Paste As new image in MS Phot Editor and
then Save As a JPG file. You retain a higher quality picture because the
Copy'd picture is a BMP which retains its original pixels.
