Change Paper Size

In a new document how do I change from 8 1/2 by 11 to Legal Size Paper

Do you want to change it permanently? Go to Format>Document, click on the
Page Setup button and change the setting to Legal. Click on OK to get back
to the Format>Document dialogue, then click on the Default button.
