Change Spell Check Language to English (UK)

I can't find where/how to change the language to English(UK) in Publisher,
though my Word and system defaults are set to Australian (we use UK spelling).

Then why don't you change Publisher to Australian English? And you don't say
what version you're running but I fail to understand if you can find it in
Word why you can't in Publisher. Roughly translated you mean "I can't be
arsed to look. Will someone please wipe my arse for me...?"

Unfortunately when I use the same process as Word (Tools, Language, Set Language) the system will not allow me to access Set Language. I can't find anywhere else where I can change it, including using help (on- or off-line).

You have to be in a text box before you can set language.
If you are not in a text box set language is greyed out.
Word is one giant text box.

Thanks, that did not occur to me. So there is no way to set the language, so
that everytime I use Publisher or a new text box it automatically uses
English (UK)? My control panel setting are already English (Australian),
which mean the language is in English (UK).

Thanks again, for your time and consideration.

I already have my system set up this way for Engish(Australia), but it seems
not to have any effect on Publisher spell check default language.

First as I said you need to be in a textbox to be able to change the
language.
But second there is a continuing trap.
The templates provided with Pub were saved in US English and every you
start a new document you have to change the language and save it.
Then when you open your saved doc again you should find it is using your
desired language.

THEN IT IS EVEN WORSE than that.
If the template has more than one box when you start you have to change
the language for EACH text box but new boxes seem to accept what you
changed the first one to. I think.

This is in PUB 2003 but I guess the older versions were just as US
centric
