Changing fields in envelope feature?

When using the address book in the Envelopes and Labels
feature, Name, address, city, state, zipcode, and country
show up in the delivery address. We would like to draw
the company field and lose the country field. This is
possible when using the Merge Wizard and creating
envelopes however that is a PAIN for just one envelope.

Any suggestions?
