Changing font colour of subject line in an Outlook Email

Just wondering how to change the colour of the font on the subject line? When I move from the body where colour icon is available to the subject line the font icon becomes greyed out and unavailable

You can't change the color of the subject line because you can't
control that option on the recipient's computer.
