Clean Registry after Removing 2007

Installed a trial version of Office 2007 Pro

Uninstalled the trial version

Installed an older full version of Office 2000 Pro

Now when I run the update from Microsoft it continues to show updates for
the Office 2007 which I removed/uninstalled.

I would like to know how to clean the registry or whatever to keep
Windows/Office update from detecting the removed version.

I'm trying to avoid doing something like this for my current legal copy of
Office 2003 Professional, but does the KB Article work for my version? Can I
pick out one product to wipe out? I'd hate to take out everything, because
there are too many data files I'd have to find and backup.

Your data files aren't impacted by installing or uninstalling Office, unless
you delete those files. Don't mess with "My Documents" or wherever they are
stored.

With Office 2003, you can use the Windows Installer Cleanup Utility to "take
out" installer information about whatever applications are managed by
Windows Installer. Then you re-install those applications to get them clean.

You'd probably want to have legal, licensed copies of the software, with the
installation media and your product key, though, as you may need to
re-install some programs.
