I've been looking for a solution to the same problem but haven't found one.
Several other posts in this newsgroup indicate there isn't a way to do it, or
at least no solutions are offered, other than to delete completed tasks.
I created another PST file called Archive and moved all completed tasks to
it. That way, I still have access to them, but they do not show up in
Outlook Today.
