I have created folders under "CONTACTS" ie
Suppliers
Customers
Friends
clubs and many more.

Later I have deleted some of them and re arrange my folders.

The problem I have now is when I choose TO: in my e-mail it show all the
deleted folders and don't show the newly created once.

How do I clean up (syncronise) this list so that it looks the same as the
folder structure under my contacts.

We shall have to assume your Outlook version.
Remove the invalid entries here:
Tools > E-mail accounts > View or change existing directories or address
books > Outlook Address Book > Change. >

In the case that the folders are now empty, 1. open the
address book icon 2. go to the tools menu, 3. choose
options, 4. in the third window, highlight the folder
that is empty and choose remove 5. hit apply 6. hit ok,
close the address book, open the address book and all
should be correct

To chime in - you may find it better to use a single contacts folder, but
use categories to filter/view your items. I prefer this method myself.
