conversion to csv

Hi to all,
I need to convert a file excel in a file .csv and so I use simple the save
as .csv.
My problem is that the characters like ', à, ò, " are convert as a ?.
Is it possible to correct this type of "error"?
It's difficult to replace because the character: ? is various characters.
