Hi Bassetlaw,
Try this:
In Outlook>Tools>E-mail Accounts>
"View or change existing e-mail accounts">
Highlight the applicable account and click "Change">
Click "More Settings" then click Advanced tab>
Uncheck "Leave a copy of messages on the server"
