Creating scenarios

How do you create scenarios in Project/Project Server? Practically every
project plan I do involved creating one project plan, leveling resources
against the current allocations, then removing tasks (reducing requirements)
to create a new scenario. Our business departments often want to see what
the impact of adding and removing features has on schedules. How can I do
this easily?

Right now I create one project plan and do the leveling, printout, then
change the start date to way in the future, save, change the start date
back, save a copy, remove tasks, relevel, printout, etc. The only problem
with this is that I have to keep swapping out the start dates and releveling
to switch between one plan and the other. Is it possible to mark a task as
void in a plan or some such thing?
