Creating Trend Charts

We have a requirment to create trend charts. These charts would
typically depict the % complete, schedule variance etc over a period
of time. These trend charts are prepared each week for each project.

I have some questions here-
Is there any other option apart from portfolio analyzer to create such
graphs? If yes, please elaborate.
I think portfolio analyzer is not a very feasible idea since it needs
to be done for multiple projects and needs to be updated each week. So
this would be cumbersome using the analyzer. Any comments?
Also, how does one have enterprise custom fields show up in the pivot
fields box while designing analyzer views? Can it be customized?

I found the answer to my first question. Please address the following
two-

Also, used the anlayze using timescaled data in professional, is there
a way to customize the fields that appear for selection?
