While working on a large table in Word, my cursor disappears and a
pencil-looking icon shows up at the bottom of the screen. Eventually the
cursor reappears and I can continue working. Is this part of an autosave
feature? Is there a way to turn it off or reset the timing of the
interruption?

That's the spellchecker automatically spellchecking your document. If you
find it intrusive, you can turn it off by clicking on Tools | Options
Spelling & Grammar | uncheck the "Check spelling as you type" and Check
grammar as you type" boxes | OK. You can manually run spellcheck at any time
by pressing the F7 key.
