Custom menu in 2007

Hi,
where are all the custom menus in the Word 2007? I know about the Ribbon
developer possibilities, but what with the documents already published?

Custom menus and toolbars created using the CommandBars object model are
banished to the Add-ins tab, where each toolbar appears as a separate chunk,
and there is a chunk for modifications to the menu bar.
