customising risks&issues

Hi i was wondering if anybody can tell me how i can customise the risks and
issues templates to incorporate the company's own risk and issue fields? I
want to do this for all of the projects that will be published so they can
use just the one template

Thanks for your help. However when i follow these instrustions and i try
"save site as template" i get an error saying the gallery is not found. Do
i have to do this from the server, or am i doing something else wrong?

Sim:

Try doing this on the server or from a terminal session into the server.
