Customizing default document template Normal.dot

How do I do this? I tried to bring up Normal.dot and change it, but when I
save it becomes a document. I also tried to create Normal2.dot and then
delete Normal.dot and change the name of Normal2.dot, but Word wouldn't let
me delete Normal.dot. Is there a good reference for the procedure in
"help"?

Also, how do I change the default page layout?

You need to open the template itself, not create a document based on it. You
can't delete normal.dot while Word is open. Do it from the Explorer with
Word closed. The default page layout is part of normal.dot.
