When I change the format of a Word document from two columns to one column,
the dates, which reflect the times when different parts of the document were
added, all revert to the current date. Is there any way I can stop this
happening?

Assuming you're entering the dates as a field (Insert/Date), after you enter
a date you want to stay fixed, click on it, press Ctrl-Shft-F9 to turn in
into regular text.
