Date & time fields

Using Word 2003. I want them to NOT change or update. I've been
though help files/options for 3 days and can't find how to do this.
(I've done it before, but can't remember how!)

If you do not want your date to automatically update when you open the
document you want to use a create date field.

Yes, but there is a way to globally 'fix' this, I've done it before,
just can't remember how! I want ALL my date/times to stay 'fixed'.
