I live in Europe.

As you know, the date are indicated like dd/mm/yyyy.
But I see that by default in all office application the default is mm/dd/yyyy.

I know for sure that on Windows PC you can set on ambient variable the default notation.

How can I do it on Mac?

You set it in the system preferences. Then restart the office application in
question and it will retrieve the system date specification.
