How do I change the default cureency from $ to € for Microsoft Templates i.e.
invoices. My regional settings are correct.

AFAIK, if your regional settings are set correctly (I assume you mean
your Mac OSX System Preferences/International/Formats/Currency set to
Euro), then XL will pick up the Euro symbol when it's next started.
