Default e-mail account

I'm running outlook 2000 on windows XP. I have a number of different e-mail
accounts and have selected one as default. However, when sending e-mails,
Outlook rarely selects my default account to send from, instead it tends to
select the first one from the list of accounts alphabetically. Therefore I
have to manually select an account from "options" each time. I can live with
this, however it really causes a problem when someone requests a read-receipt
as I have no control over who the receipt is sent from. Are there any
settings I have missed?
