How do I set the default font in Word and Entourage?

In Word you can go to Format> Font, select what you ant then click the
Default button in the lower left of the dialog.

In Entourage there are several Default Fonts used for different purposes. In
Entourage> Preferences select Fonts from the categories list then select
which font for each purpose.

BTW - All this information is readily available in the Help for the
respective programs - A good place to spend some time
