Default Print Settings are Overridden

We have Office 2003 Pro installed for our users and they all connect to a
colour printer. The default settings are to print as Black and White but it
seems that when a user receives a document that has colour in it, the default
settings are overridden. I have done some tests and it seems that if you
receive a file that was saved with the printing settings set to print colour,
then this will override the default print settings of users who are set to
print black and white as the default. It seems that office documents save
this meta data somewhere within the document. Is this a correct assumption?
Also if it is, how can you stop these colour documents overriding the default
black and white printer settings? It is costing us a fortune in colour print
cartridges. Please help!
