My default time zone is set as Pacific Coast USA and I live in East Coast Australia. How do I change the default time zone to Australian (Sydney) toime so that I do not have to change the event time zone every time I make an entry?

Entourage uses the System settings. You need to change the time zone
there (but make sure TimeZone support is on in the Entourage prefs)

Do you mean your OS time zone is set to East Coast and your default Event
time zone is in Pacific? Entourage's Calendar is using the OS time zone
while the default Event time zone can be set in Entourage preference.

Please go to Entourage -> Preference -> Calendar (under "General
preferences")-> default time zone for new event -> change to Australia time
zone. Thus your New Event will use Australia time zone.

There is a problem with two time zones. Caracas (Venezuela) and La Paz
(Bolivia) are NOT in the same time zone (see drop down menu for Default Time
Zones). Caracas is GMT -4:30 and La Paz is GMT -4. Please correct this error.
Thank you.

I've reported this error, but I suggest whenever you find a problem like
this to send feedback. It could be overlooked on the newsgroup.

When working in Office, you can use the ³Send Feedback² option under the
Help menu in all of the Office applications to contact MacBU.

Or... Visit the Mactopia Product Feedback link here:
