In Access 2007, go to:
Start Button | Access Options | Advanced
and set the:
Default find/replace behavior

In previous versions, it's under Tools | Options.

The 3 choices are:
- Fast search = match whole field
- General search = anywhere in field
- Start of field search = start of field
