Defining variables for substitution

In Front Page 2000 I can use a substitute phrase such as CompanyPhone
wherever the company phone should be displayed. Then if it changes I simply
change this variable and it will be automatically correct in all the places
where I have used the variable.

How do I do this in Front Page 2003?
