Display email address in Contact as the email address not contact

I'm having trouble that Outlook converts an email address in Contacts to the name of the contact when I need to see the email address for further downline activities, such as dumping the list into Excel for other projects. What is the trick to keep the email address and keep the system from automatically changing the format from (e-mail address removed) to JohnDoe?
