Do NOT Send OoO Message to Specific Recipients

Greetings,
I would like to configure my out-of-office assistant so it will NOT
auto-reply to specific email addresses (eg., internal helpdesk ticketing
systems). Is this possible, please?

Out of Office messages are handled from the Exchange server end, not Outlook.
You have to go to your Exchange Admin.

Yes, add an OoO rule whose action is to play a sound and add the addresses
to which you don't want the message to go as exceptions. If you can't
figure this out by yourself, post back.
