I have a document with over 360 pages and when I open it
I get only 340 pages. This is a problem when I have to
edit because all the page numbers are mixed and I have to
rearrange all over.

What can I do to keep the number of pages that I save and
open them again without any missing pages.

Is any text missing? This could be a function of your default printer driver
being different from the one you actually use for printing.

Which version of Word? What operating system?

I have no idea what you mean by the "page numbers are mixed". Are you saying
that (for example) page 17 might become page 19, and page 341 might become
page 7, etc.? Or, just that the document repaginates so that page 19 might
become page 17, and page 360 become page 340?

If the latter is happening automatically, then you probably have the
template set to Automatically Update Document Styles. With the document
open, check Tools - Templates and Add-ins, and see if this is the problem.
