don't know how to explain and ask

I've got an email that looks like this:

<id source="Lexus Event - Test Drive Request - North American Intl AS

<requestdate>2010-01-19T09:11:25-06:00</requestdate>
<vehicle interest="buy" status="new">

<make>Lexus</make>
<model>Other Lexus Vehicle IS F: Other Lexus Vehicle IS F</model>
<vin></vin>
<stock></stock>
<trim></trim>

Why the extra characters / formating?? The "<what's in between>" ?
What causes that?
The original email is much longer and it makes it hard to read and decipher
what's there.

forgot to mention;
this is happening in Outlook 2000 and 2003; running on WinXP pro Sp3

They are composing the message using XML - possibly pulling the data from a
database and its corrupted somewhere along the way.
