drop down menus, how to get full view

When I go to one of the drop down menus, only an abbreviated menu shows. To access items that do now show up right away, I have to click on the button that has the 2 downward pointing arrows. Is there a way to change the setting, either in Excel or the Windows 2000 operating system to have the drop down menus show the full assortment of items automatically?
