You have not provided any details as to version of Outlook, configuration,
type of mail account.

Ideally you would lock the PC/laptop when you leave it so that the contents
of Outlook are not readily visible. If you're looking for more than that, you
need to provide more information.

Add a password to your Windows account so you have to enter it when you
login.

Don't share your Windows account with other users. Your account, your
use, your choice to share it and let ANYONE do whatever you can do
because the OS will see them as you.
