Earned value and Baselining

I noticed that earned value only calculates when you baseline. I have a
schedule that I baselined some time ago. We subsequently decided to use
Project's built-in EVA and set all resource charge rates to $1/hr to
facilitate this. I don't want to rebaseline though (even to baseline1) since
there are several tasks that have had their dates change due to early and
late finishes of predecessors over time and I don't want to set the baseline
to these new dates. Can I snap a baseline to kick off EVA without losing the
original baseline data as the basis for the EVA calculations?

For EV project must compare against a baseline. This is part of the
definition of EV. So the question is which one of the baselines do you want
to compare against? You can not compare against both.
You can edit the baseline if you like, so you could just baseline now and
edit the several tasks that have changed.
