Edit Other People's Messages?

Today I happened to notice that you can edit messages that people send to
you. We use email as official communication in our office. If this is the
case (that you can change email messages that people send to you) how could
you prevent people from changing the text of a message that was sent? I'm
imagining:

"Congratulations! You've been hired as the new janitor! Your pay rate will
be $1.00 / hr and you will be required to work Saturdays."

turning into:
"Congratulations! You've been hired as the new janitor! Your pay rate will
be $10.00 / hr and you will never be required to work Saturdays."

Any thoughts other than PGP check-sums on messages? We need to be able to
trust, at least to some degree, the email that we receive.

Trust email? Email can be spoofed, faked, and altered in
so many ways it's frightening. What do you think is
behind all the internet fraud, spam, and viruses that we
are currently plagued with?
The more you trust email, the more trouble you will get
into.
