editing scanned documents

After I scan a document and I transfer to Microsoft Word for editing it
changes the format. How do I scan and edit a document in its original format?

Umm, print it an use a pencil? If you are scanning it it was on paper.
Now on the other hand if you mean you want the OCR engine to put things
into paragraphs and tables and use different font, well you will need to
use a considerably more robust program such as OmniPage Pro.
