I have a column of e-mail addresses in an Excel sheet. Some of the addresses or cells will open a new email document but some of them will not. How do I get all of the cells to be able to open a new e-mail document?

Some of them are probably interpreted as text (or may be preceded by an
apostrophe which is only visible in the formula bar.) For those which are
not links, click in them to begin editing and then remove the apostrophe if
it exists, or just press enter. It should then revert to an email link.
