Email from on outgoing email forms

I switched to a new web hosting company that is using a
Unix server. I am publishing my site using front page
2003. The problem is when I send my form from my page it
sends the email to the correct email address but it sends
it from the hosting company email address instead of mine.
They stated that this is the way Unix does the email from
the server. Does anyone have a script on how to send the
email via my email services running on the server instead
of the company's default server email address.

Not sure.

Just curious as to what difference it makes what the from address displays as.

When the owners see an email from an anonymous email
address they have been deleteing them
