I have a small signature block I want to use and it's the proper colors and typefont for my business logo. It includes my email address and I do not want the address hyperlinked, as it underlines and changes the color of the type. I've tried the signature in Entourage format, in .doc, and .jpg but they all end up hyperlinking by the time the email is received.

Actually, Entourage does not make your email address a hyperlink - the
recipient email program does that. It's up to their program whether to
override your font style and color choices - and many will.

This is a straightforward notion - but doesn't quite seem like the complete explanation. For example how does it explain the test messages I send to myself (Entourage to Entourage), which also insert the hyperlink? I would like to change this, if you know how. Thanks.

There is nothing you can do.

As Adam has already mentioned, the hyperlinks are created by the e-mail
application on the receiving end; in this particular case, Entourage turns
the URL into an active hyperlink. There is absolutely nothing you can do to
control this behaviour.
