Empty 'from' field

I have Exchange 2000 and Outlook 2000. When mail is undeliverable, it goes to the system administrator, but when the system administrator tries to resend the mail, the 'from' field is empty (you can not see who sent the original mail)

I am able to see the original sender is I add the system administrator's mailbox as an additional mailbox

What is going on
Any help will be appreciated
